There is none for the operator. The conversion happens in the same POS transaction, at the rate quoted when the guest scans the QR. If BTC moves 5 percent while the guest is still deciding on tip, that's absorbed by the conversion rail, not by you. Your check settled for exactly the fiat amount shown.
For Lightning and rollup USDC, fees are typically well under card interchange (which runs 1.6 to 3.5 percent). BTC on-chain fees can be higher for small tickets, so the module suggests Lightning for anything under a threshold you set. Net-of-fees, most operators come out ahead.
