Why your menu is your first hire

The single most under-managed asset in a restaurant is the menu. It gets designed once, printed, laminated, handed to guests for years. Meanwhile it is the first employee your guest ever meets, and the only one who talks to every table.

Your menu already sells or it does not

Watch a guest read a menu for the first time. Their eyes travel a predictable pattern. They land on the price column before they read the dish names. They scan for their allergy word before they scan for anything they want. They skip the third and fourth entree because the eye tires. If your menu was a server doing this in front of the table you would fire them.

A living menu changes the math. When a guest lands on the page in their language, sees the four dishes that will not kill them highlighted, watches the price appear in their currency, and gets a one-line pairing suggestion from a real sommelier, the sale is halfway done.

Live translation is not a translation problem

Every restaurant technology vendor pitches translation. Most of them ship Google Translate wired up to a menu PDF and call it a day. The result reads like a cousin's wedding toast in a language nobody speaks. A menu translation has three constraints that consumer translation tools do not respect.

The most valuable thing a fine dining captain does is say, out loud, "yes chef, guaranteed no tree nuts on that table." The most terrifying thing is saying it wrong. A menu that lets the guest tick their allergens and instantly shows only the dishes that satisfy the constraint takes that risk off the captain and puts it into the kitchen where the protocol lives.

The right allergen filter is not a checkbox. It is a promise the kitchen can back up.

Upsell prompts have a bad reputation because most of them are dishonest. "Would you like fries with that" was invented to sell a food cost that was already amortized. Guests learn to say no on reflex.

Honest upsell says something the guest wants to hear. "This dish sings with the 2019 Barolo two tables over." "There is a chocolate dessert the pastry chef built specifically for this entree." The prompts that raise check without raising resentment come from the chef and the sommelier, not from the corporate playbook.

Three numbers to track

  1. Average check by menu language. If your Spanish-speaking tables spend forty percent less than your English tables, your Spanish menu is the problem.
  2. Time to order. A menu that reads well shortens the pause between "here is the menu" and "we are ready to order." Track it. It should compress fifteen to thirty percent in the first month.
  3. Sommelier prompt attach rate. Of the tables that saw a pairing prompt, how many bought the paired item. Under ten percent and the prompt is wrong. Over thirty percent and you have a sommelier who deserves a raise.

The menu is a hire, budget for it

Most restaurants spend more on a single Friday night meat order than on their menu design. Then they wonder why the menu underperforms. Treat the menu like a hire. Give it a job description. Measure its performance. Retrain it when it drifts. It will outsell any human on the floor because it talks to every table.
